NONI EXPERIENCE

The following Experience was offered by Dylan Brown just before taking a one year seat as the president of my personal fan club! Just kidding buddy hope you’re doing well – enjoyed hearing the Bocas stuff, thanks for that.

So I first became interested in the noni fruit when I was living on a farm in Costa Rica that had a noni tree on it. The owner of the farm was giving me a tour of all of the fruiting trees on his property when he stopped in front of a broad-leafed tree with about 50 whitish/clear fruits growing on it. The words he spoke were: “this one is called the noni fruit. It’s a medicinal fruit, apparently the cure-all for everything, highest antioxidant content. They say it’s an anti-cancer agent. You can make it into a juice and drink it.”

I ended up spending three and a half years in Costa Rica on that excursion. Just working and living on farms. I even helped to start an organic farmer’s market.

I really was interested and wanted to learn more about this noni fruit and how to prepare it. I spent three and a half years trying to perfect this process and thought that I had. That was until one day when I was at the farmer’s market talking to a woman that was an expert with noni.

I told her that I was making it into a juice. Just squeezing and straining the soft ripe nonis through a basket, then adding sugar and sour Mandarina citrus juice to it.

I thought that I had done it. I’ve officially figured out how to prepare what is touted as the healthiest food on the planet. What she said to me was this: “well that’s good and healthy medicinal stuff too, but if you really want to achieve superfood status, and get the most nutritional value, then you will have to add fermentation to the process.”

Now, I do have some experience with making beer and wine, and how that fermentation process works by adding the yeast that you buy at the store to the liquid and at first I thought that this is what she spoke of. But then she explained further, “what you have to do is that you have to let a small amount of mold to form on the outside of the fruit and that mold is what activates the fermentation of the noni fruit.”

Interesting I thought. I had never heard of this before, and any other time that I tried to make noni juice, I had thought that if they had formed a mold on the outside of the fruit that meant that the fruit was just more fodder for the organic compost.

It turns out though, that in reality, this is actually when the noni fruit is at it’s most valuable. And that’s what most people do not know about the noni fruit.

Right after I was told by this woman at the farmer’s market about the right way to prepare the noni by fermentation is also when I happened to have to leave Costa Rica and fly back to the US.

While in the US I kept wondering and wondering about how to do it better next time.

I spent three and a half years preparing the noni wrong and was not achieving full nutritional and medicinal potential the whole time. And I didn’t even know. Sheesh.

Then my next go at it finally came when I flew to Panama a few years later. I found me a good ‘ol noni tree at the side of a road and started plucking the half-ripe noni fruits off of it.

This time I paid very close attention to the fruits, and let them set in a bowl until every fruit had what looked like whitish/yellow hair growing from the skin of the fruit as if it had started to “rot.”

This is when most people would think that the fruit needs to be composted. However, in reality, this is when the noni fruit is at it’s prime and it’s most valuable. I never would have thought it either.

So right when the fruit gets the mold is when you squeeze and crush up the fruit, and just leave the mash and the mold all together in an airtight container. And sure enough, the mashed fruit did start to ferment.

The fermentation process takes a few days or a week, or more depending on how much fermentation you want to take place (and yes it does become an alcoholic beverage too.) If you keep adding sugar and letting the fermentation go for longer, the more alcoholic the beverage will become. You know when it is fermenting because it is producing bubbles as the live yeasts from the living mold eats the sugars.

But this fermentation is also actually what adds more nutritional and medicinal value to the finished product, and what makes it into what is classified as a “superfood.” My “aha!” moment had arrived!

I figured out my favorite flavor and way to prepare the noni. I just added a few chopped apples and sugar to the fermenting noni fruit, and then let it all ferment down together for about a week and a half.

The final product actually looked and tasted very similar to bubbly champagne, but with far more nutritional and medicinal health benefits than champagne, or even red wine for that matter.

I hope that this bit has increased your knowledge about noni and it’s preparation so you don’t spend three and a half years preparing noni with fewer health benefits too. Go ahead and give it a try.

Health is #1. I am thankful to have found Nutritional Diversity Sciences it has been an empowerment all the way around!
